Just Like Grandma’s: Vegan Oat Raisin Cookies

Oatmeal cookies are one of the healthiest versions you can make, due to heart-healthy oats (which also have fibre that keeps you full for longer). Many oatmeal cookies add dried raisins for more benefits, others prefer chocolate chip.
Perfectly chewy when made right, these are super-simple to make with just a few ingredients, and are quick to bake. Most versions also include some kind of spice like cinnamon. It’s always best to chill your dough in the fridge for an hour or two before baking, to prevent cookies from over-spreading in the baking pan.
Keep oatmeal cookies away from pets due to dried fruits, vanilla and spices.
For these recipes, use a good ice-cold vegan block butter with no palm oil (Flora and Myoko’s are good brands). Also be sure not to overmix the dough, and leave stem vents when baking.
